Day 120! December 30th


Okay so I was a bit disappointed when I got on the scale this morning and it said 203.  UGH!  I don’t think I am going to hit the under 200 mark by tomorrow.  I didn’t let this get me down to much I started the day off with a ham, onion, and egg scramble.


Then I took Katie and Olivia over to Jungle Jim’s.


They had such a blast!  I forgot to bring my protein shake so I had a slice of pizza, just one and it wasn’t to big.


Then we came home a relaxed and while they ate popcorn I ate jerky, cheese, and apple slices.


This evening I went to Zumba Tone and burned 397 calories! When we got home we had a big box full of presents from my mom and dad.

My favorite gift are the Doc McStuffins headphones:


I don’t have to listen to her shows over and over again anymore!  She also got a walk and talk puppy that we have to grab batteries for tomorrow.

I tried something new tonight per Tim’s suggestions…twice baked spaghetti made with spaghetti squash instead of noodles.


It was very yummy; we will make it again!

My mom also sent these in our Christmas Box.


It isn’t very nice to send your daughter who is trying to lose weight two of her favorite fattening snacks. Caramel popcorn and Pirouline’s  I had one of the Pirouline’s and 1 piece of caramel popcorn that’s it. I am making Tim take the rest to work tomorrow.

Tim and I for the last 7 years (maybe more) have always spent new years eve with friends.  Even since Olivia we have always gotten together this year I am sad not to be able to get together with them.  But Tim and I decided to start our own little tradition instead of eating party food and drinking party drinks which has been typical in the past; we are going to put Olivia to bed and he is going to grill steak and shrimp for us.


Day 119, December 29th



Still not feeling tip top this morning especially a night with just a four hours of very interrupted sleep.  I made a simple protein shake, nothing fancy just almond milk, protein powder, and half a banana.

I then went over to the day care I will be working at next week and met Olivia’s teachers and let her get use to the classroom with me there.

I came home and grabbed some almonds for a snack.


Olivia’s friend Katie came over and we went to Hobby Lobby to let Olivia pick out special fabric for her blanket for nap time at daycare, its a minnie mouse blanket.  Then we went to Target and I let her pick a crib sheet out for her cot and got Tim a new water bottle since he lost his at the airport. I then took both girls over to Chick-Fil-A to play while the snow continued to fall.  (I am over the snow by the way! It sucks to have to clean off your car every time you have to stop to go in somewhere.)


I had the grilled market salad and a small bowl of chicken tortilla soup (with no tortilla strips).

After lunch we came home and bundled up.


and then we went sledding!


Katie was the pro as I nor Olivia had ever done it before. Let me tell you it was quite the workout helping both girls and the sled up the drainage ditch.  We had a lot of fun though!

This afternoon I was trying to convince myself to go to the gym and Marie reminded me the biggest battle is getting there, you never regret it once you do.  So I ate a protein bar tonight and headed to the gym. I got there a little early so I walked a mile and burned 100 calories then I went to Zumba and burned another 390!

I came home and made this amazing taco salad for dinner:

20141229_211311It was a little higher in calories due  next time I will cut out the sour cream and cheese.  It was delicious.  I made my own lime vinaigrette dressing:

1 tbsp olive oil

1/2 tsp white wine vinegar

Juice of one lime (use fresh about a tablespoon and half give or take)

2 turns of the salt and pepper mill

Day 118, December 28th


I was kind of shocked to get on the scale this  morning and still see 201.6.  Tim and I both were blah today not sick just not feeling up to doing much.  I didn’t have an appetite all day so I didn’t eat much.

I had some 8 crackers w/ cream cheese around lunch time.

And a bowl of soup for dinner.

Day 116, December 26th


I did not get enough sleep last night.  It was hard to get out of bed and get moving this morning.  I started off with a protein bar since it was to close to Zumba and the smoothies make my stomach hurt when I do Zumba immediately after finishing.


I laughed at myself this morning saying old me would just stay home because of all the snow on my car.


It was a workout in itself un-burying my car from 6 to 8 inches of snow.  Then I was off to Zumba Tone.  I used the heavier weights for the first half the class today!  I burned 355 calories and signed up to do tomorrow’s class too. I had an oatmeal protein smoothie on the way to Walmart afterwards.

I came home and made a ham and swiss flat bread sandwich for lunch.



For dinner I had started 15 bean soup but it wasn’t finished after cooking all day 😦 The beans were still hard so Tim said lets order chinese, ugh okay.  Let’s see what I can order that is semi healthy.  Kung Pao Chicken it is usually lower in calories.

It was gross thank goodness Tim order lettuce wraps so I could have those.


I ate half of them and one vegetable spring roll.  Overall I think that was a good choice.

I am planning on going to Zumba and I have to go get groceries for the week.




I saw this earlier this week and it made me laugh out loud.  I never expect to be Barbie, but slowly I am starting to not feel like a cabbage patch doll either.

We were up early to open presents like 6 am early.  Her first gift her Minnie Mouse hat (which was still on my night stand) :/


After presents we skyped with his mom and his sister’s family while Tim made this yummy (not so healthy breakfast).


Sausage, fried potatoes, scrambled eggs, and a biscuit.

We then bundled up and headed out to play in the snow; Olivia wanted to build Frosty (nobody warned me!!!)


I realized today that I don’t have a hat so I borrowed Olivia’s batman hat. Tim got to really appreciate the one made for him last year by our dear friend Maddy.

Noone told me that it is damn near impossible to build a snowman in Utah.  Tim wasn’t much help as I learned that he has never built a snowman!   Here the snow is dry, light, and fluffy unlike the snow we got in Arkansas that was usually very wet.


With a little help we were able to pack some down into a base; she was so happy.  In Arkansas we would always start with a little ball like the one she has got and roll it on the ground and it would slowly get bigger.  NOT HERE!  So here is our pathetic snowman.


Olivia informed me that frosty is bigger. We ran into the lady that lives beneath us and asked her (since she has lived in Utah awhile) She told me the trick is to wait until the snow starts to melt, so maybe tomorrow afternoon.  Anyone else have a tip or trick so I can help Olivia build Frosty.

Playing in the snow worked up an appetite and junk food really wasn’t going to cut it for me so I used the cheese dip and made some chicken spaghetti.


I also tasted the ham that Tim’s work gave us, AMAZING.  I ended up snacking on ham slices most of the afternoon.  Not the most healthy option, but far better than sweets.

For an official afternoon snack I made this plate, so that everything was measured out:


The pimento cheese was gross so I didn’t eat it. The cream cheese with raspberry habanero jelly is one of my favorites.

While Olivia napped Tim and I finalized our budget for January and looked at some houses. That is always a dangerous thing to do.  A lot of what is for sale in our price range is short sales and we have been told that they can take about 6 months to get to closing so we have started looking to see what we like. Originally we were going to try to move into a rental house after the apartment, but Tim does not want to have to move twice (its expensive)  so we may be buying a house in 2015.

For dinner we had ham, fresh steamed green beans, sweet potato and a roll.


Olivia use to love green beans as a baby, but she hasn’t eaten them often as a solid.  Tonight she helped Tim cut of the ends and got to use a spray butter on them and ate 3 helpings.  We will try it again to see if this was just a fluke or will she actually eat them again.

For dessert Tim and Olivia had a piece of Jesus’s birthday cake. I had a caramel that Tim brought home from work.


We remember that Jesus is the reason for the season.  The bible tells us in  Matthew 5:16 “let your light shine before others, that they may see your good deeds and glorify your Father in heaven.”

If you knew me three years ago when I was pregnant with Olivia, my husband fell through our ceiling on Christmas Day because I wanted to work on getting her nursery set up and a cable needed to be moved.  *Please take note of her birthday 5-11, yea I was crazy.

I had planned to take it all down tomorrow, but Tim made a good point that today I had his help to keep Olivia out of the way and tomorrow I would be on my own.  So it is all boxed up and he graciously took it back to the storage unit.

Calories who counts on Christmas (yes they still count, the scale proves it, but I didn’t track; my guess is somewhere between 2000 and 3000)

Overall I am happy with the decisions I made today.  It allowed me to feel like I got to celebrate Christmas food wise and I think that because I had a plan I ate less than I normally would have else where.  Lastly, Merry Christmas!

Day 114, December 24th


I will keep this short and sweet b/c I am ready for bed.  I have a feeling there will be a two and half year old up very early ready to open her presents.

I did not eat anything before Zumba at 8:30 this morning.  Olivia was up early with her first night time accident in awhile.  And it didn’t take her long to find Twinkle’s farewell gift for her:


It had all kinds of goodies inside, chapstick, fingernail polish, new PJ’s, a velvet coloring page, and a bible based coloring book.

The benefit of being up so early is we got to see Tim dressed all spiffy for their company Christmas lunch.


I cannot believe how much we have gone through in the last 10 years together.  It is truly amazing how much he does to support me and Olivia!

He left and we got ready for Zumba.  one hour and 333 calories later I was on the road running a few errands while eating a protein bar.

Olivia and I came home and got straight to baking. We made a birthday cake for Jesus:


* I was trying to take photos and as you can see she missed the bowl completely with the butter!

We also made Santa some of his favorite cookies:


For lunch I had a half serving of Taco Soup:


And for an afternoon snack I sampled one of the delicious cookies above.

For dinner we made fish Tacos.  This was a new recipe and Tim and I both loved them.  It was quite a shock because I am not a huge fan of fish and he really doesn’t like avocado.  You can find the recipe here.


I had 3 of them and a little extra slaw on the side.

After dinner we watched a Mickey Mouse Christmas show off of Netflix and then Olivia got into her new jammies and ready for bed:


She is getting so big.  I am so excited for tomorrow.  The first Christmas in awhile where I am actually excited for Christmas morning.  I cannot wait to watch her marvel at the gifts as she opens them and enjoy spending time with her while she plays with them!


Psst: I finished her hat just in time for Christmas tomorrow. We are expecting frigid temperatures next week so hopefully it will help.  When I say frigid we have a lot of single digit lows and one day in the negative.

I am not adding calories or tracking today or tomorrow. Just photo documenting what I eat so that I am aware of what is going in my mouth.
